Smoked Baby Back Ribs on the Big Green Egg

Description

What’s great about baby back ribs is that they are so good on their own, you just need to stay out of the way. They can be made on any home grill/smoker as long as you follow the time and temp guidelines.


Ingredients

Scale
  • 1 slab baby back ribs (a.k.a pork loin back ribs)
  • 1/4 cup your favorite BBQ rub (I used Lane’s BBQ Magic Dust)
  • 1/2 cup apple cider
  • 1/2 cup your favorite BBQ sauce, the sweeter the better, divided
  • 1/4 cup light brown sugar
  • 5 pats butter
  • 2 Tbsp honey

Other BBQ needs

  • 6 chunks cherry wood, if using charcoal grill
  • Heavy duty aluminum foil
  • Basting brush
  • Food safe spray bottle

Instructions

  1. Prepare grill or smoker for indirect cooking at 250 degrees with cherry chunks for smoke flavor.
  2. Remove membrane from back of ribs by carefully slicing a knife between the membrane and bone. Use a paper towel to pull and remove the membrane.
  3. Season ribs liberally with your favorite rib rub.
  4. Put ribs on smoker and cook for 2 hours.
  5. Prepare spray by mixing apple cider and 1 tsp rub into a spray bottle. Shake to dissolve rub.
  6. Spray ribs every 45 minutes.
  7. After 2 hours, prepare wrap by laying two sheets large enough to fully wrap the ribs onto a rimmed baking sheet. Lay out butter, brown sugar, honey and 1/4 cup BBQ sauce in the shape of the ribs.
  8. Remove ribs from smoker and lay them meat-side down onto the brown sugar mixture and add 1/4 cup spray mixture.
  9. Wrap ribs tightly in foil and return to smoker to cook for 90 minutes-2 hours.
  10. Remove foil package from smoker and carefully open and flip ribs so bone-side is down.
  11. Return ribs to smoker and brush on BBQ sauce. Cook for 1 hour.
  12. Remove ribs to a cutting board and let rest 10 minutes before slicing between the bones and serving.
