Buttery Garlic Shrimp with Fresh Pasta

Ingredients

- 6 garlic cloves, finely chopped
- 1 shallot, thinly sliced
- 1/4 cup extra virgin olive oil
- 4 Tbsp unsalted butter
- 1/2 tsp red pepper flakes, or more if you like it spicy
- 1 pound, thawed shrimp, peeled and deveined
- 1 pound, pasta
- 1 lemon
- Salt and pepper, to taste
- Parmesan cheese rind, for grating
Instructions
- Cook pasta according to package directions, drain and set aside.
- Reserve 1/4 cup liquid used to cook pasta.
- Combine oil, shallots and garlic in a cold, large sautee pan and slowly bring to medium heat until sizzling, about 5 minutes. Season with a pinch of salt and pepper.
- Add butter and red pepper flakes and continue cooking additional 5 minutes. The shallots and garlic should brown slightly.
- Add shrimp and cook for 2-3 minutes per side.
- Add pasta and pasta water to pan and cook, stirring frequently, for 2-3 minutes.
- Add juice of 1 lemon to pasta and toss to coat.
- Plate with a heaping helping of freshly grated Parmesan cheese.
