Juicy Lucy Meatball Subs

Description

The meatballs are stuffed with cheese, just like the famed Juicy Lucy buger. Need we say more?


Ingredients

  • 16 oz prepared spaghetti sauce
  • 1 pound ground beef
  • 1 pound ground pork
  • 2 tsp kosher salt
  • 2 tsp black pepper
  • 2 cloves garlic, finely chopped
  • 2 eggs, lightly beaten
  • 1 cup, panko bread crumbs
  • 16 small chunks parmesan cheese
  • 2 Tbsp vegetable oil
  • 4 Tbsp unsalted butter, room temperature
  • 1 tsp granulated garlic
  • 2 8-inch hoagie rolls
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large heavy bottom pot, bring spaghetti sauce to simmer over medium-low heat.
  2. Make the meatballs by combining beef, pork, salt, pepper, garlic, eggs and panko. Do not over mix.
  3. Break off 2 oz pieces of the meat mixture and roll into golf ball sized meatballs. It should make 16-20 meatballs. Set meatballs on a foil-lined baking sheet.
  4. Flatten meatball and place one small chunk of parmesan cheese in the center. Wrap meat around the cheese and form into a ball. Be careful to ensure the cheese is well sealed inside the center of the meatball.
  5. In a cast iron pan, heat vegetable oil over medium-high heat until just smoking.
  6. Add meatballs, in batches if necessary, and brown on all sides, about 2 minutes per side.
  7. Remove meatballs to simmering sauce, cover and cook for 1 hour. The sauce should just cover the tops of all the meatballs.
  8. While meatballs are cooking, prepare compound butter by combining granulated garlic and butter in a small bowl. Mix thoroughly.
  9. Spread butter mixture on hoagie rolls and toast under a broiler for about 5 minutes. Watch closely so as to not burn.
  10. When meatballs are finished, remove pot from heat and place three meatballs on each hoagie roll.
  11. Spoon over spaghetti sauce and top with mozzarella cheese.
  12. Put meatball subs under broiler until cheese is melted, bubbly and brown, about 5 minutes.
  13. Remove subs and top with freshly torn basil. Serve immediately.
