Juicy Lucy Meatball Subs

- 16 oz prepared spaghetti sauce
- 1 pound ground beef
- 1 pound ground pork
- 2 tsp kosher salt
- 2 tsp black pepper
- 2 cloves garlic, finely chopped
- 2 eggs, lightly beaten
- 1 cup, panko bread crumbs
- 16 small chunks parmesan cheese
- 2 Tbsp vegetable oil
- 4 Tbsp unsalted butter, room temperature
- 1 tsp granulated garlic
- 2 8-inch hoagie rolls
- 1 cup shredded mozzarella cheese
Instructions
- In a large heavy bottom pot, bring spaghetti sauce to simmer over medium-low heat.
- Make the meatballs by combining beef, pork, salt, pepper, garlic, eggs and panko. Do not over mix.
- Break off 2 oz pieces of the meat mixture and roll into golf ball sized meatballs. It should make 16-20 meatballs. Set meatballs on a foil-lined baking sheet.
- Flatten meatball and place one small chunk of parmesan cheese in the center. Wrap meat around the cheese and form into a ball. Be careful to ensure the cheese is well sealed inside the center of the meatball.
- In a cast iron pan, heat vegetable oil over medium-high heat until just smoking.
- Add meatballs, in batches if necessary, and brown on all sides, about 2 minutes per side.
- Remove meatballs to simmering sauce, cover and cook for 1 hour. The sauce should just cover the tops of all the meatballs.
- While meatballs are cooking, prepare compound butter by combining granulated garlic and butter in a small bowl. Mix thoroughly.
- Spread butter mixture on hoagie rolls and toast under a broiler for about 5 minutes. Watch closely so as to not burn.
- When meatballs are finished, remove pot from heat and place three meatballs on each hoagie roll.
- Spoon over spaghetti sauce and top with mozzarella cheese.
- Put meatball subs under broiler until cheese is melted, bubbly and brown, about 5 minutes.
- Remove subs and top with freshly torn basil. Serve immediately.
