Ingredients

- 2 chicken breasts
- 1/3 cup olive oil
- 4 Tbsp white vinegar
- 2 tsp kosher salt
- 1 tsp black pepper
- 2 garlic cloves, minced
- 1 tsp oregano
- Juice of 1 lemon
- 2 mint leaves, chopped
Instructions
- Cut chicken into 1/2 inch chunks, slightly larger than bite sized and set in a resealable bag.
- Whisk together the remaining ingredients and pour over chicken.
- Seal the bag and massage the chicken. Refrigerate for 24 hours.
- Prepare grill for direct cooking over medium-high heat, about 450 degrees.
- Skewer chicken and cook for 8 total minutes, turning every 2 minutes, until the chicken reaches an internal temperature of 160 degrees.
- Butter hoagie rolls and toast for about 1 minute.
- Place chicken on hoagie rolls and serve immediately.
