Buttery Garlic Shrimp with Fresh Pasta

The key to this dish’s success is to not be shy with the butter.


Ingredients

  • 6 garlic cloves, finely chopped
  • 1 shallot, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 4 Tbsp unsalted butter
  • 1/2 tsp red pepper flakes, or more if you like it spicy
  • 1 pound, thawed shrimp, peeled and deveined
  • 1 pound, pasta
  • 1 lemon
  • Salt and pepper, to taste
  • Parmesan cheese rind, for grating

Instructions

  1. Cook pasta according to package directions, drain and set aside.
  2. Reserve 1/4 cup liquid used to cook pasta.
  3. Combine oil, shallots and garlic in a cold, large sautee pan and slowly bring to medium heat until sizzling, about 5 minutes. Season with a pinch of salt and pepper.
  4. Add butter and red pepper flakes and continue cooking additional 5 minutes. The shallots and garlic should brown slightly.
  5. Add shrimp and cook for 2-3 minutes per side.
  6. Add pasta and pasta water to pan and cook, stirring frequently, for 2-3 minutes.
  7. Add juice of 1 lemon to pasta and toss to coat.
  8. Plate with a heaping helping of freshly grated Parmesan cheese.
