One-Pot Poached Salmon with Garlicky Tomatoes

Description

Easy-peasy salmon with deep flavors that is perfect to kick-start a diet or a nice meal at home.


Ingredients

Scale
  • 2 salmon fillets
  • 1 head of garlic, cloves thinly sliced
  • 1 shallot, thinly sliced
  • 8 small vine-ripened tomatoes, halved
  • 1/4 cup extra virgin olive oil
  • 2 cups kale
  • Salt and pepper to taste

Instructions

  1. Heat oven to 425 degrees
  2. Add oil, garlic and shallots to a cold, medium pan and bring to medium heat.
  3. When garlic and shallots begin to sizzle, add tomatoes, cut side down. Season with salt and pepper and continue cooking for 8-10 minutes until tomatoes have released their liquid. You can help this along by gently pressed down on the tomatoes after 8 minutes.
  4. Season salmon fillets with salt and pepper and nestle into sauce mixture.
  5. Immediately move pan to oven and cook for 10-15 minutes, or until salmon register an internal temperature of 125-130 degrees.
  6. Remove from oven and gently press kale into sauce to wilt.
  7. Once kale has wilted, serve salmon in a shallow bowl and top with sauce and kale. Add soft bread for dipping and a pinch of fresh lime juice.
