Game Day Cherry Smoked Spare Ribs

Description

We’ll be using the 3-1-1 method (3 hours in the smoke, 1 hour in foil, 1 hour in smoke) for perfect smoked ribs every time.


Ingredients

Scale
  • 1 rack spare ribs
  • 1/2 cup your favorite BBQ rub
  • Yellow mustard
  • 1/4 cup light brown sugar
  • 1 Tbsp honey
  • 3 Tbsp butter
  • 1/4 cup apple cider
  • 6 chunks cherry wood
  • 1/2 cup of your favorite BBQ sauce

Instructions

  1. Flip rubs so the meat is facing down and remove the thin membrane from the back of the ribs.
  2. Put a thin layer of mustard on the bone side and use your hands to coat to ribs.
  3. Season ribs liberally with your favorite BBQ rub.
  4. Flip and repeat steps 2 and 3 (this can be done the night before, just wrap the ribs in plastic wrap and put in the fridge overnight).
  5. Prepare grill for indirect cooking at 250 degrees with cherry chunks for smoke flavor.
  6. Once the smoke has thinned and the grill has settled at 250 degrees, put ribs on the grill.
  7. Smoke for 3 hours.
  8. Prepare a double layer of heavy duty aluminum foil and spread brown sugar, honey and butter on the foil.
  9. Remove ribs and place meat-side down onto the foil.
  10. Raise the edges of the foil and add the apple cider.
  11. Tightly wrap the ribs in the foil and return to grill, meat side down.
  12. Cook for 1 hour.
  13. Remove foil packet from grill, open and flip ribs meat side up.
  14. Return ribs to grill, meat side up for 1 hour.
  15. During the final 5-10 minutes of cooking, brush ribs with your favorite BBQ sauce.
  16. Once sauce has set on the ribs, remove to cutting board and let rest 10 minutes before slicing between the bones.
