Smoked Thanksgiving Turkey

Description

A turkey recipe to please the entire family, even your difficult uncle.


Ingredients

Scale
  • 1 Whole Turkey (15-20 pounds)
  • 1 box brining kit
  • Canola cooking oil spray

Instructions

  1. Prepare brine by following instructions on brining kit

  2. Place turkey in brine solution and put in fridge for 1 hour per pound

  3. After brining, remove turkey from solution and pat dry

  4. Return turkey to fridge on roasting rack for up to 24 hours (optional, but will achieve crispier skin)

  5. Set grill for indirect cooking at 325 degrees and add cherry wood chunks or chips

  6. Remove turkey from fridge, spray with cooking oil and place in smoker

  7. Spray turkey every 30 minutes with oil, checking to ensure it is not getting too dark.

  8. If turkey is getting too dark, cover spots in aluminum foil to prevent further browning.

  9. Cook turkey to 165 degrees internal temperature

  10. Rest for 30 minutes before serving.
